Nutrients from Fish Surprisingly Added to Cooking Oil

Nutrition studies show that fish is a nutrient-rich food, containing many important nutrients for the body such as essential amino acids, minerals like Iron, Zinc, Calcium and most of the necessary vitamins, especially vitamins A, E, D and some B vitamins.

The study on catfish, by the National Institute of Nutrition under the Ministry of Health, shows that fish has a high nutritional value because it is high in protein, low in fat, low in cholesterol, abundant in Omega 3- 6 - 9 unsaturated fatty acids, DHA/EPA, which are important nutrients supporting many internal organs, of which Omega 3, Omega 6, EPA/DHA are essential fatty acids that our body cannot synthesize.

According to the "Vietnam Food Ingredients Table" (Institute of Nutrition - Medicine Publishing House released in 2007), catfish has a protein level of about 23% - 28%, higher than other freshwater fishes such as snakehead, perch, and crucian (16% - 19% depending on type). In particular, the composition and percentage of essential amino acids (EAA) in catfish are very balanced and suitable to the needs of Vietnamese.

In terms of fat, the fat in fish is high in biologically active and unsaturated fatty acids accounting for 50% -70% of the total fat, so it is better for the body than the fat from other animals like pigs or cows.
